An electrical or hot-plastic smell from a cooktop is urgent. Switch the breaker off, call 911 for fire or smoke, and keep the cooktop out of use until the source is found. A food smell that fades once the spill has burned away only needs cleaning.

Spills that crept under a burner cap, a coil drip bowl full of grease, or sauce baked onto the glass all smell strongly as they char and fade once they are gone. What sets a built-in cooktop apart is where the rest of it lives: the wiring box, the control boards and, on induction and downdraft models, a fan all sit in a closed cabinet under the counter, so heat and odor from a failing connection often reach you through the cabinet doors first. A smell of hot plastic, a sharp electrical tang, a knob that looks melted, or an odor that returns with the cooktop switched off points to wiring, a switch or a board, and that is a reason to cut power before anything else.

My new cooktop smells during its first few uses. Is something wrong?
Protective oils on new elements, burners and grates cook off over the first hours of use. Run the vent, air the room, and expect it to fade. A smell that persists after that, or smells electrical, deserves a visit.
Could the smell be coming from the cabinet below the cooktop?
Yes. The wiring, the boards and any fans of a built-in cooktop sit there. An odor that is strongest with the cabinet open points below the counter, so cut the breaker and have it checked.
Can I keep using the other burners in the meantime?
Not while an electrical smell is unexplained. One bad connection can feed the whole cooktop, and every use adds heat to it.
One knob looks warped. What does that tell me?
A warped or discolored knob usually means the switch or valve stem behind it ran hot. Stop using that position and book an inspection of the switch.
